Kid with spiny chicory


Ingredients

 

1 kilo kid, chopped
1 kilo spiny chicory
7 teaspoons olive oil
2 tablespoons white wine
2 lemons, juiced
Salt and pepper

Preparation

Clean and wash the spiny chicory thoroughly. Immerse in boiled water for 5 minutes and blanch to offset its bitterness. Heat olive oil and brown the meat over moderate heat for 4 minutes. Extinguish with wine, salt, add 1 glass of water, cover and simmer for about 30 minutes.
Add the spiny chicory, stir, cover the pot and let the food simmer for 20 minutes. Add lemon juice, continue stirring and let the food boil for 5 more minutes. Serve warm in its rich sauce.
