For the dough
1 small cup olive oil
1 small cup tsikoudià
1 teaspoon salt
1 glass water
ca. 1/2 kilo flour

For the filling
1 plate homemade cheese, grated
3-4 eggs
2 teaspoons sugar



Combine the ingredients for the pastry sheet and knead into a firm dough. Prepare the filling with the cheese, the eggs and the two teaspoons of sugar. Roll out a pastry sheet and cut into circles, half of them in the size of a larger saucer and half of them in the size of a smaller saucer. Place the smaller pastry sheet on top of the larger one, so that you obtain a more solid bottom. Spoon some filling on the small pastry sheet and fold all sides over the filling so as to cover it. Fry them in plenty of olive oil without turning them over. Dredge with sugar and serve.
