Preparation
Peel and cut the potatoes in thick strips in a bowl. Then salt and sprinkle them with the lemon juice. Mix them well by hand. Cover and let them stand for 40-50 minutes.
Heat the olive oil in a pot or deep frying pan. Carefully transfer the potatoes into the hot olive oil and fry, until they turn golden brown.
Do not cover the pot or frying pan in the process. Drain on paper towel, sprinkle with oregano and serve immediately.
