Spinach rice


Ingredients

1 kilo spinach
2 ripe tomatoes, peeled and finely chopped
1 large onion, mashed
3 spring onions, finely chopped
1 cup parsley, finely chopped
2 cups rice
1/2 teaspoon cumin (optional)
Salt and pepper to taste
Olive oil

Preparation

Remove yellow leaves from spinach and wash it well. Use a large pot to saute the onions in olive oil. Add the spinach, tomatoes, parsley and let simmer for 12-15 minutes – do not add water.
Use a skimmer to remove the mixture and leave only a thin layer of spinach at the bottom of the pot. Apply layers alternating between rice and spinach, until all ingredients are used. Add in the spices to taste and enough water to cook the rice (normally 3 cups of water for 1 cup of rice). Next, remove the pot from the heat and cover it with a linen cloth for 10 minutes before serving.
