Cod-fish with Sautied Local Greens


1 kg salted cod-fish
½ kg wild local greens
½ kg spinach
2 big onions
4 garlic cloves
1 water glass oil
2-3 ripe tomatoes
salt, pepper



The night before, put the cod-fish in a pot and cover it with water (which you change 2-3 times). Leave it for the night in order for the extra salt to be removed and then cut it into pieces. Clean the wild greens and the spinach, wash them well. Put the oil in a casserole and brown the onions and garlic. Add the greens and spinach and slowly let them soften. Then add the tomatoes, a tsp. of salt and pepper and cook for 20 minutes at normal heat. Ten minutes before they are done, add the cod- fish in the pan.
This dish can be cooked with and without tomato.
