Preparation:
Put the butter into a saucepan and as soon as it has melted, add the sugar which has previously been dissolved in milk. Stirring continuously, add the flour until a firm dough is formed. Remove from the heat and when the mixture has cooled, add the beaten eggs and the baking soda dissolved in the raki. Mix to a dough again, until a soft and pliable mass is achieved. Prepare the filling as follows: Mix together the walnuts, almonds, sugar and cinnamon. Now cut off a piece of dough and flatten it out over the palm of your hand. Put a little spoonful of the filling on it and close it well. Put the ‘mamoulia’ on a buttered baking sheet and bake in a moderate oven for about half and hour. Immediately on removing them from the oven, sprinkle over the flower water and powdered sugar.
