Preparation:
Beat the eggs and add the oil. Mix well together and add 1 cup of water, the baking soda and the flour, to form a moderately stiff dough. Leave aside, wrapped in a teacloth, and prepare the filling: mix together the cheese and eggs, cinnamon and mint. Now roll out the dough into a sheet, using a rolling pin (or a pasta machine). Cut out circles with a glass. Place a teaspoon of the filling on each circle and fold it over to form a closed half-moon shape. Heat some oil to a high temperature and fry the envelopes. Serve hot, with honey.
