Cherry spoon sweet


1 kg cherries
1 kg sugar
½ cup water


Select firm cherries which will withstand boiling. Remove the stalks, wash the cherries and dry them with a cloth. Put the sugar and water into a pan, turn on the heat and as soon as the sugar has dissolved (without letting it boil) add the cherries. Now bring them to the boil once or twice and remove from the heat. When they have cooled, remove the fruit from the pan with a slotted spoon and put them on a plate. Then return the syrup to the heat and boil it until it is well thickened. Add the cherries again and bring to the boil a couple of times. Add a little lemon juice and remove the pan from the heat. When the spoon sweet is cold, pour it into clean jars.
