Ingredients
For the dough
1 kilo flour
1 glass olive oil
1 lemon /orange, juiced
1/2 teaspoon salt
Some water
Olive oil for frying
For the filling
2 glasses almonds, roughly ground and browned
1 glass sesame seeds
1 cup sugar
Cinnamon and cloves, 1 teaspoon
For the syrup
1 glass honey
Cinnamon
1 glass sugar
1 glass water
Preparation
In a bowl beat the oil, the salt and the lemon juice. Slowly pour in the flour and some hot water and work into a soft dough. Roll out a thin pastry sheet and cut into 8cm wide and 20cm long strips. Layer 2 teaspoonfuls of the filling on top, fold over and press edges together making sure that it is completely closed. Starting at one end, twist the ribbon in a spiral, similar to a sariki (the traditional headdress of Cretan men). When the pastry sheet and the filling are used up, fry them. Pour the syrup on top and serve.
